Have your cake and eat it too
Tammy, the owner of Cakes by Tammy, recently gave us some great advice on keeping your cake fresh for the traditional first anniversary feasting:
Method #1
- wrap the entire cake box in several layers of plastic wrap
- place it inside a large storage container before placing it in the freezer
Method #2
- place the cake top (inside the box) in the refrigerator for 2 hours until the icing is firm
- remove the cake top from the box and wrap it in several layers of plastic wrap
- place the cake top back inside the box and wrap the box with several layers of plastic wrap before placing it in the freezer
Thawing the cake
- Remove the cake from the freezer and place the entire box in the refrigerator the day before you plan to eat it. Directly thawing the cake at room temperature will cause condensation to build up and will result in a soggy cake
- On the anniversary day, take the cake out of the fridge and leave it at room temperature for at least 5-6 hours
- Cyndy’s additional tip: When transferring the cake from the fridge to the counter, remove the plastic wrap. Find a large storage container, like those used to store lettuce. Using the lid like a plate, put the cake top on the lid and then cover the cake completely by putting the storage container over it like a dome. This tip will help you to keep the maximum amount of frosting on your cake rather than on the plastic wrap.
Tips for a great cake experience
- Avoid fillings in your cake top. Fillings do not freeze well and will negatively influence the taste of the cake
- Write a love note to include in the cake box. Open it on your anniversary date to relive those special feelings you had while the memory of the wedding was still fresh in your minds
- Put on your veil to eat your cake. Yes, it may sound silly but having a good laugh together is one of the best things you can do. And what a great tradition it would make if you whipped out that veil every year on your anniversary!
- And, of course, pull out those wedding photos for a trip down memory lane!
